Peach clafoutis - GF and DF
Summer is here and it is wonderful to be able to take advantage of the sweet seasonal fruits to bake light and juicy cakes.
Clafoutis is a perfect recipe to enhance the fruits' flavours and very easy to do gluten and dairy free, as it requires little flour.
You will need:
30g almond flour
20g rice flour
25g corn starch
50g sweetener - cocconut sugar, maple syrup, honey
a pinch of salt
a vanilla pod - grains scraped
300ml of coconut milk - can be sustituted with any milk
500g fruits - peaches, apricots, prunes, cherries, or a mix
Preheat your oven @ 180C.
Mix all the wet ingredients together. Mix all the dry together. Combine.
Grease a glass or ceramic mold with a tbsp coconut oil. Pour 1/3 of the preparation in the mold and cook for 10 mins.
Then arrange big chunks or slices of the fruit and pour the rest on the mix. Bake for 30 mins until the top starts to brown.
Allow to cool for 15 mins and serve!
